Mother’s Day falls in May, which is when many fruits and vegetables are in season.
Take advantage of this by using seasonal fruits and veggies in your desserts, while they’re at the peak of flavorful.
Below are five seasonal fruits and vegetables you can bake with and inspiration for desserts.

1. Carrots
Carrots are ideal for growing in the spring.
The most popular carrot-based dessert to make for Mother’s Day is carrot cake.
There are also several variations of carrot cake you could try, like cupcakes or cookies.
If there is any leftover cake, you can turn it into delicious cake pops.
Cake pops are made by mixing the baked cake together with cream cheese frosting. Make sure to avoid using too much frosting, because then your pops will fall apart as you roll them into balls.

Once you’ve got your cake and frosting combined, take a cookie scoop worth of the mixture and roll it into a ball. Place the balls on a piece of parchment paper and allow them to sit in the freezer for around 15 minutes.

While they are refrigerating, prepare the melted candy. White chocolate goes best with carrot cake. Once your chocolate is melted and your cake is cooled, dip the cake stick into the melted chocolate first, then place it into the rolled up dough. Then, dip the cake pop directly into the chocolate and let the excess drip off.
Once the chocolate has hardened, the cake pops are ready for you and your mom to enjoy.
2. Lemon and lime
Lemon and lime aren’t just appealing garnishes. They are filled with citrus flavors and the star of many desserts.
With lemon, you could make a scrumptious lemon meringue pie or a lemon curd to use as a topping for several dishes.
Lemon can also nicely compliment shortbread cookies, or yummy lemon poppy seed muffins.

For a different take on a classic beverage, make a refreshing frozen lemonade. You can do so by simply blending lemonade with ice.
Key lime pie is also a popular choice in addition to lime bars.

Lime jello or sorbet are a perfect springtime treat, too.
3. Strawberries
Strawberries’ sweet flavor makes them the perfect ingredient for dessert. There is no better time to use strawberries than in the spring. Plus, you have tons of options to choose from when it comes to strawberry-based delights.
Of course, there’s a strawberry cheesecake.

Keep things simple with chocolate covered strawberries or make a homemade strawberry sauce you can use as an ice cream topping.

Strawberry shortcake is another flavorful dessert based around the fruit, as well as a spring strawberry trifle.
4. Bananas
You can’t go wrong with a banana cream pie.
If you don’t want to make a pie, banana pudding is also an option. Don’t forget to slice up bananas and pile whipped cream on top.
You could also bake a loaf of banana bread. This can be served as dessert or eaten first thing in the morning for breakfast.
If you are eating it the following day, be sure to warm up your slice and add butter.

Like strawberries, you can also dip bananas in chocolate. Make an arrangement of chocolate covered treats, including the classic strawberries and bananas, as well as apples, pretzels and marshmallows for a delightful platter.
5. Pineapple
Pineapple is great for snacking on its own, but it can also be worked into a variety of popular desserts.
For a unique spin on cheesecake, make a pineapple version of the dessert. Another great choice is a pineapple upside down cake.
In addition to this, line a skewer filled with mom’s favorite fruits. Drizzle the fruit with chocolate sauce for an easy Mother’s Day dessert.
